• Zest of 1 unwaxed orange

• 1 tablespoon dried yarrow flowers

• 1 teaspoon dried angelica root or lemon balm

• 200 millilitres water

• 1 teaspoon raw honey

• 1 teaspoon apple cider vinegar


  1. Simmer zest, yarrow, and angelica in the water.
  2. Cover and steep for 20 to 30 minutes.
  3. Strain, stir in the honey and vinegar while warm, and refrigerate. Use within one week.

To serve: Mix 25 millilitres tonic syrup with 100 millilitres sparkling water over ice. Garnishwith a twist of orange or a sprig of yarrow.
